Philly Cheesesteak Toastie recipe
· 3 tablespoons olive oil
· 2 red onions, sliced
· 2 red or yellow peppers, sliced
· 2 garlic cloves, chopped
· 2 teaspoons vinegar
· 1 teaspoon sugar
· 4 sub rolls
· 2 rib-eye steaks
· Handful flat leaf parsley, chopped
· 200 g mozzarella or cheddar
· Mustard (optional)
Heat the olive oil in a frying pan, then fry the onions with a pinch of salt, stirring until starting to soften.
Add the peppers and fry, stirring occasionally. Add the garlic, vinegar and sugar, cook for five minutes.
Heat the grill to medium. Split the subs in half lengthways, then put on a baking sheet and toast cut-side up for a few minutes until lightly golden.
Season the steaks with salt and black pepper, then fry for five minutes on each side. Set aside on a board to rest, then slice.
Stir the parsley into the peppers/onions. Layer the bottom halves of the subs with peppers, onions and steak, then add a layer of sliced cheese and mustard. Put the topped subs under the grill to melt the cheese.
Cut in half and serve.
